My first homebrew... My first brew was an IPA extract recipe. I left the secondary carboy on my kitchen counter for about a week. And then bottled. When I tried it it tasted like vegitable juice. All people could say when they tried it was - well at least it is clean. I learned to appreciate very quickly the power of UV induced oxidation.
Homebrewing Story... I was recently brewing a double IPA. Everything was going fine until I tried to recirculate the mash. Comeletely stuck. I did everything I could to unstick the system, including dumping the mash into another kettle, clearing the flase bottom, and the drain tube, put everything back. Oops, it stuck again. We're talking about 36 pounds of grain. I had to sprage the hard way with about three pounds of grain at a time in a grain bag and squeezing the shyte out of it. Finally got all strained and I decided to check the gravity to see if it need to be adjusted. 1.095. Holy crap that was better than I anticipated. So I went on to boil and added all the hops (a lot of hops - it is was set for 120 IBUs). After it was done I took a reading expecting it to be in the 1.1 range. Nope it was 1.065. I forgot that the sugar would form gradients as it cooled and that I needed to mix the wort thoroughly before taking the initial reading. I taseted the wort and it was bitter to the Nth degree. Gasoline might be a good interpretation. So the next day I ran to the homebrew store and bought three pounds of DME, one pound of dextrose and a pound of cane sugar to spike the beer. I am predicting the OG would have been about 1.075-1.080. When I transferred to secondary the gravity was at 1.017, and was still very bitter, but had nice mouth feel surprisingly. All in all it wasn't too bad - although it had a bit of "green apple" flavor in the background. Version two and three came out much better. Hey live and learn.
