Recipe Details
Tasting Notes "There's a lot going on there" was the comment I heard when sampled- everyone seemed to like it so I took the comment as a compliment. I taste raisins, tobacco and earth in it but I'm not good at descriptives. Alcohol is pleasantly subdued after one year. The calculator says ABV is a bit below style guidelines, but I tend to think it's closer to 9%-it packs a pretty good punch to the head in any event. (And I did not take temperature into account when taking my gravity readings.) Calculator also says a bit high on the IBU's. I find it to be pretty well balanced overall- but everyone loves their own child! Looking forward to tasting after another year.

Procedure Bring 1 gl. H20 to 180f; add bagged grains and steep at 160f for 40 minutes; pour off first run, then steep again with 1/2 gl. at at 160f for 20 minutes Into brew pot with the wirt and enough H20 to bring to 3 gl; bring to boil; remove from flame, add the light DME and the extract Return to boil Hops schedule: 60 minutes--4 oz. UK Goldings 45 minutes--1 oz UK Goldings 1 minute--1 oz UK Fuggles Cool and into fermenter with enough H2o to bring to 5 gl (I used water pre-boiled and already cooled) Pitch 2 packages of Safale s-04 After 4 days, pitch 2 packages of Lavlin Wine Yeast EC (champagne yeast) Into glass secondary after 14 days; store in cool dark place; After 2 months in secondary, dry hop with 1 oz UK Fuggles (from what I now know about dry hopping this was probably off no/little value but its my recipe and I'm sticking to it!) Bottle 8 months after going into secondary
