Pull two 2-litre portions of the wort and boil each down to 1 US pint and add them back to the kettle during the boil BEFORE hop additions. The first time I made this beer, I pulled one, reduced it as the kettle was heating to a boil, added it back in and then pulled another just as the kettle started to boil. I don't know why, but I think this tasted better than just pulling 4 litres and reducing them. **********************************
After primary is done, rack the beer on to 1 oz of toasted oak chips and your favorite WHOLE hops (I would recommend Amarillo, 4.5AAU) for 11 days.
