| Procedure |
- Single infusion mash at 153 for 90 minutes (or 60 minutes your choice)
- Mash out
- Sparge to bring volume to 6 gallons wort
- Bring to boil
- Add Amarillo hops and set timer for 45 minutes
- Add 1 tsp of irish moss and set timer for 5 minutes
- Add Spalt Select hops and set time for 9 minutes
- Add Sterling hops and set timer for 1 minute
- Flame out and remove hops
- Chill to 70 degrees F
- Sprinkle yeast in bottom of fermenter
- Pour (aggressively pour for aeration) wort into fermenter
- Record OG
- Cover with lid and stick the 1/2 filled airlock into fermenter lid.
- Allow to ferment 2 weeks
- Take SG for 2 consecutive days, if it reads the same your fermentation is done and record the FG
- Boil 5oz corn sugar in 1 pint of water for 10 minutes, allow to cool for 15 minutes, pour sugar water into bottling bucket.
- Siphon wort into bottling bucket, taking care not to aerate the beer
- Bottle and cap
- Condition bottled beer at room temperature for 3 weeks
- Refrigerate for a few days/weeks an enjoy
