Tasting Notes aromas of noble hops and mineral, over dry grass notes with underlying malt character. crisp but rich in texture. intense hop character and slightly bitter finish.

Procedure dough in 3 gals at 112, temp stabilize at 95 (20 min rest), add 1 gal boiling water. temp 125 (20 min rest) decoct thick third, step up to 145 (40 mins), boil 15 mins, return to mash. temp stabilized at 144 (30 min rest) . decoct thin half, boil 15 mins, return to mash. temp stabilized at 166. sparge with 3 gals at 166. one hour boil. one oz spalt for full boil. .5 oz saaz plug for 15 mins and .5 oz saaz plug for last 5 mins. chill and pitch liquid yeast. ferment 55 F for 7 days in plastic. rack to glass and drop temp to 44. lager for six weeks before bottling with two days at room temp for diacetyl rest.
