Description
Decided on the name because my X is pretty darn bitter. Current wife wasn't too keen on it, but I'll put a different name on my chalkboard above the bar. Never had an ESB before, but I sure am darn happy with it.

Recipe Details
Tasting Notes Deep copper color. So far I've sampled one off the backroom shelf at a cool storage temperature. Nice balanced bitter flavor with good carmely tones. It has a suprisingly slight toasted flavor to it and I'm not sure where that comes from but it's outstanding. Second sample was at a cold temperature and the toasted flavor seemed to be knocked out and more esters were coming through. I may just drink these at cellar room temperatures since the unique flavors came through the best. Absolutely delicious!

Boil Volume 2.50 gallons
Boil Time 60 minutes
Batch Size 5.00 gallons
Yeast White Labs London Ale WLP013 (75% app. attenuation)
Primary Fermentation Glass, 7 days
Secondary Fermentation Plastic, 6 days
Other Fermentation
Procedure Steep grains in 2.5 gallons of water until boil. Add extracts, bring back to boil. Add hops to schedule below. Pitch yeast at 75 degrees.
