Description
This started out as a clone of Newcastle Brown but has grown alot with each batch. I've experimented with the grain bill and the yeast but have kept Kent Goldings as my hop of choice. Pull and pint for a silly looking smile on your face every time.

Primary Fermentation Plastic bucket, 7 days
Secondary Fermentation Glass carboy, 7 days

Procedure Start with 1.3 quarts water to each pound of grain. Protein rest at 122 F for 30 minutes. Bump temperature up to 156 F for 60 minute saccrification rest then bump to 168 F for five minutes to mash out. Sparge with lots of 170 F water to get 6 gallons of wort. Boil for 60 minutes with hop additions, 1 ounce each of Goldings, at 40 minutes and 10 minutes left to go. Cool to 65 F and pitch yeast.
