Yeast White Labs #WLP830 German Lager (76% app. attenuation)
Primary Fermentation 14 days plastic at 50° F
Secondary Fermentation 10 days glass at 50° F
Other Fermentation Lagering 42 days in keg at 35° F
Procedure Mash program: 10 qts to reach 127° F for 30 mins. Add 6.25 qts to reach 150° F for 60 mins. Raise temp to 168° F for mash out, approx. 10 minutes. Btw, I don't know what method this form uses for bitterness, but I used Tinseth with 4.7AA Hallertau hops and ended up with 38.5 IBUs. So adjust your figures to end up with 38 IBUs and ignore the strange alpha figures in this recipe that don't seem to add up. The key is 6 AAU of each type of hop, or as close as you can get.
