Procedure Toast oats for 10 minutes on cookie sheets. Steep grains at 155 F for 30 minutes in 2.5 gallons. Drain and sparge with 155 F water. Add DME, bring to boil, add 1 oz fuggle hops and 1 oz willamette hops. At 50 minutes at 1 oz Chinook hops. At 55 min add 1/2 whirfloc tablet and 1 tsp irish moss. At flame out, steep 4 oz ground pinon coffee for 20 minutes. Chill wort add to fermentor and top up water to 5 gallons. Ferment primary 7 days, secondary 10 days. During last 2 days of secondary, cut vanilla beans length-wise and soak in irish whiskey; after 2 day soak add beans and whiskey to fermentor for 2-3 days prior to kegging/bottling.
