Description
Attempt at an Irish Red Ale named after a former co-worker when I lived in Ireland, who when asked how he was, often replied "strugglin-like"

Procedure Steep grains at 150F for 30 minutes. Sparge with 1 liter water at 150F. Add LME and boiling ops, boil for 60 min. Add Irish Moss last 5 minutes. Add aroma hops in final 2 minutes. Chill wort, strain, and transfer to fermenter. Top up volume with cold water to achieve OG of 1.050-1.055. Pitch yeast at 68-72F, move to a temperature stable and dark location. Fermentation begins within 24 hours. When fermentation slows, (5-7 days) transfer to secondary for 1-2 weeks. Transfer to keg.
