We just finished brewing an american hef and bottling the wit.. Lets just say forgotten to add priming sugar until after having half the bottles capped was an interesting experience Definatly much smoother to only deal with one batch at a time, as opposed to 3 as we attempted last go-around. Batch sparged a mini-mash for the hef and hit 71% mash eff. Amazing what moving from a rolling pin (~50% eff) to a cheapo corona mill will do for things.. Next up.. a tripple, I think. Too many empty bottles.. If they're going to sit around and take up space, they might as well have some beer in them! |

Lets see.. Just racked a wit which smells wonderful, very orange and fruity, but tastes a bit watery. Probably has to due with missing the target o.g by about 10 points, mostly due to eyeballing amounts of extract. Oh well, call it a good summer beer and buy a scale for next time Need to rack a cider which, despite using fancy smancy sweet mead yeast still fermented down to like .001 or so. doh! Started a gallon of mead last week with an o.g of 1.120, we'll see where it finishes. Fortunatly its still bubbling away, so no worries about getting stuck yet. Picked up some sourwood honey at the famers' market the other day, we'll see what sort of a mead that makes; Its supposed to be quite a mild honey. |

Bottled and bottled and bottled. phew! Tried one of the Amarillo APA's the other day.. mmmm! not too bad for a first wack at making up a recipe. Not quite sure what sort of adjustments to make next time. I'll have to have another.. Next up I think is a mild. I'm kicking around the following: For 5 gallons, with a 2 gallon boil, partial mash: 2# DME 2.5 # 2-row .75 # Crystal 40 .25 # Chocolate .5 # Wheat 1.5 oz Fuggles @ 60 min .5 oz Fuggles @ 1 min WLP 013 London Ale O.G ~ 1.035, 19 IBU Struck it rich at the recycle center the other day, there were 7 4L wine jugs sitting in the glass bin. Now they are sitting on my porch waiting to have all the discusting crud cleaned out. Then comes the fun of thinking up what to fill them with. |

Sampl..err.. Check the gravity of the apa and the stout this afternoon. Tasted pretty good. The stout still has a bit to go, hopefully its not stuck, at .030 (from about .058) right now. Hopefully the yeast is just pissed at these cold nights we're having, thought the apa is down to .010 from about .048.. oh well, no worries.. After doing battle with grains armed only with a rolling pin, I've started eyeing corona mills on ebay. Not as fancy as could be, but if I can find something for cheap that can stand in for now, all the better.. |
