Ah, Saturday brew chores....

Today is a big day - been so busy and stressed that I'm *finally* getting around to doing this stuff...

Kegging one, maybe two, Wit beers that my Gay Friend Jason made a while back...

Kegging the Old Stoner Lite 'pale ale' we made out at Denny's way back when.....

Pulling off enough for a few bottles to enter in the HOTV comp, then kegging my part two Alt from the Great Decoction Experiment.

Bottling from a keg about 6-9 bottles of GF Jason's pale ale Mirror Pond clone.

Dumping a keg of the ESB From Hell.... that beer is so bad I may throw away the corney keg....

Clean whatever kegs might be leftover and just laying around...

Seemed like there was more to do, but I'm sure this will keep me busy for a while....

I don't have anything specific handy, but do a net search on Fred Echardt (sp) - he has a world renowned Sake list that you could learn a lot from...

They are all hiding from people like Ben, a roguish character who will wine and dine a woman to gain her confidence, and at a weak moment, abscond with all their beer.....

We have a couple of women around here me thinks, though I'm hard pressed to remember the last time they popped up to say anything....

Welcome...

Without being there to take a sniff of my own, it's hard to say.... with the strong aroma of yeast, alcohol and such, I'm not surprised that you percieve it as being pretty sweet.

Really, I wouldn't worry about any of this for one nanosecond - sounds like you are in good shape. It's a Wee Heavy, so it's *supposed* to be a tad sweet, at least until it's aged out a bit.

Give it a week or two in secondary (no need to rush these things) then bottle it up. My first WH didn't come into its' own for about a year....
