I brewed my 1st Belgian tripple last Saturday. It was an extract kit from Keystone home brew. Everything seemed to go well, but my fermentation temps were up and down. It started out at about 78Deg for 6 hours or so and then went down to 65 after I moved the pail into the garage. Its Thursday now and all bubbling in the airlock has stopped. I figure that Ill leave it in the fermenter for a full 2 weeks before moving it into a secondary pail for 7 days or so. The kit came with 2 grams of Paradise seeds, yet the recipe didnt say how much to use. The package that the seeds came in said to use sparingly so I only used 1 gram after I cracked the seeds the best that I could.I put the seeds in a grain sock, Im not sure if I should have dont it that way or put them directly into the boil. Im going to save about a spoon full of the yeast cake and stir it into the bottling bucket when im ready to bottle. Hopefully this beer will carb better than the last batch that I brewed. Im not sure how long to let it bottle condition before drinking, maybe someone here at the forum will have some experience with tripples and chime in. It was fermented with Wyeast 1214

Tried my First...and Last...German Rausch beer over the weekend.
Holycatscock, It must be and aquired taste! Reminded me of drinking a slim Jim dipped in creasote. One never knows till one tries...

I bottled my Imp stout a couple of weeks ago...A fantastic brew! Tonight I bottled another stout that I made with the same yeast. I'll have to wait and see on this one. Off the barrel it tastes ok...Next brew will be a belgian abby or barley wine, not sure which. I have also discovered Victory Hop Devil..another great brew! Cheers and good brewing "E"

Did my 2nd partial mash yesterday, another stout. It's fermenting very well using the WLP004 irish ale yeast that I saved from a similar stout last week.1 batch in primary, 1 batch in secondary....Life is good..
Sipping an Ommegang Belgian Abby, which I now have found in 4 packs instead of just the larger bottle with the cork. Still haven't found any BigFoot BW around here..Cheers

Well I racked my 1st partial mash stout to the seconday today, tasted it and it was pretty good. I was shooting for a reg stout but the gravity was a bit too high {1.064}for bjcp guidelines, maybe a foriegn style stout or Imperial stout? Getting ready to start building Denny's batch sprage sys next week...Good Brewing
