Brian, since you brew extract, there are only a few things that could be wrong with your OG, and I suspect it might be your measurements. If you use the specified amount of extract and if you end up with the correct amount of wort, there's no way your OG can be off. Do you do partial boils and top off when you're done? If so, the issue is likely that the wort and top off water aren't getting mixed enough, no matter how much you think you mixed them up. Wort is heavier than water and will sink to the bottom of your fermenter, which means that when you take a gravity reading you're getting a watered down reading. Agaqin, extract has 100% efficiency, so if you use the proper amount and end up with the proper amount of wort, your OG HAS to be what was predicted. |
