Can do so much with them... One 5 in a keg, and the other 5 in bottles. Or, one 5 with a certain dry hop, and the other 5 with a different one!!

I kid. 10 Gallons is a happy thing. I can't remember the last time I used the same yeast in both 5 gallon fermentors. Variety is the spice of alcoholism...

Really, anything over 15 gallons was getting boring. It's useful if you have some parties/festivals coming up, and it's great for club brews, but I don't want to personally drink 15 gallons of anything (even the best beer ever) in a row. I like variety!

You need more kegs Bryansbrew. 200 gallons of storage capacity is a good number. Fill yer vessels and you're good for a year.

On occasion I add a different yeast to the two 5 gallon fermenters from my 10 gallon batches. For example I'll make essentially a Pale Ale out of one with US-05 and then add a WLP 800 for a CA Common, which I later dry hop well.
I've done similar on many different grain bills along the spectrum but if you really want to have fun try making a partigyle and getting 15 gallons out of 10! One big beer and 2 small and you end up with 3 beers.
It's so nice to brew once and get 2-3 beers. Helps fill the taps on the keggerator quicker.

I'm at the point now where I am brewing 10 gallons and fermenting it together. I am then splitting 5 gallons into a carboy and souring it. I was given 10 5 gallon fermentors so I have lots to fill. I am excited about my sour saison and sour wheat I have going now.

good thread- looking at all these reasons like experimenting with different yeast or temp and getting 2-3 different beers...I think I am ready for the jump up to 10 gal batches...just looking for a keg for a boil kettle

10 gallons is the best way to check out different yeast. I'm redoing my stand so I can have two ten gallon batch going at the same time. More beer than I'll need but I want to do some more testing.

Split tests on yeast is awesome. You can even get 15G out of a slightly concentrated wort then dilute down and use 3 yeasts.

I use 2 electrical brewpots with ~ 7.5 gal each and this allows me to experiment also with different hopping.

You could also split it using the same yeast in each carboy but ferment at different temps to see how that affects the same beer.

yes! I think it'll be fun working like a scientist and changing one variable at a time, then noting all of the differences.
