Subject: Wet Hop Ale Critique

I'll call it "Alice", after the country road that i found the hop vines on.

80 % Munich
18 % Two Row
2 % Wheat Malt

.75 oz Cascade Pellet @ the boil (just because i have no clue what variety these hops are, so i wanna get a decent bitterness with a commercial hop

1 oz wild undried hops @ 20, 1 oz at 10, 1 oz at 5, 1 oz DH

OG:1.051
FG:1.013
SRM: 9
IBU:25~
ABV:4.9

any suggestions? I'm also planning to cut the wild plant back when winter comes and take the rhizome for next year.

Hey Aidan

Its pretty cool that you are ready to use these already. It looks good to me I dunno if you are going to need more hops to get what you are looking for as the rule is that it takes more wet hops to accomplish what dry hops do.

Are you gonna dry any of these?

I think your on the right track. See what these wild hops do to your beer first then use them. I have been using a 4:1 ratio for wet hops to dry and it seems to be working for me.

I think im gonna dry half of them. ill only need one of the freezer bags. also, what would yeast would you use? im thinking thames valley. I was gonna use american ale but whenever i do it doesnt really flocculate well for me.

they could be really good, but don't be surprised if they taste terrible. Some guys brought in a bunch of beer and hops they made with wild hop plants that tasted like catpiss times ten! It was undrinkable. But still a cool idea and dont' be discouraged! Just letting you know those wild ones can be funky!

Very interested in how much hop aroma and flavor you get out of you wild wet hops. I'm doing a brew now with my home grown hops and I'm using 5 times the amount of hops based on the hops not being dried.

Your recipe is fine, but if you truely want to know what you're getting... just do 2row and the hops... and I agree, I would add much more hops if you using wet... maybe 2-3oz each addtition.

I would also make a tea, it will give you a good idea of aroma and flavor. This has been said before I know but I have done in the past and I'm also not afraid to taste it......usually bitter but so what I've had nasty things in my mouth before and I'm still here

Which Munich you using?

Whats the 2% wheat about?
That's about 2-3 oz.
No matter what it's intention it wont do much at that amount.

I just made a 50/50 munich/2row,
and thats a lot of munich.

It has quite a bit of flavor, and if I was doing a fresh hop experimental beer, I'd go a cleaner, simpler malt bill.

Like 80/20 pale/munich.
