Hi folks,
I'm doing a batch of steam beer as a favor for someone. I'm not a big fan of the style, but I'll have some healthy yeast cake to repitch with in a couple of weeks. Can anyone suggest another beer style that works out using Steam beer yeast? I'm sort of thinking of Biere de garde.

I don't think it attenuates high enough for a bdg.

What kind of attenuation is need for a BDG? I'd bet you get good attenuation at 147f. I don't use that yeast so not familiar with its flavors.

Maybe an Oktoberfest? and ferment at as low as temperature possible.

Can you ferment at 50f? If so try any style lager that you like.

AZ, I ferment in the basement which is pretty much a constant 62. No fridge big enough for a carboy, so I cant' do a true lager. Cannon, always wanted to do a barleywine, interesting idea.

I say go for the Oktoberfest. The Steam Beer yeast is a low-temp ale strain that acts like a lager strain. Might produce a very, very good Oktoberfest! Good call Dannyjed!

Redskin, thanks for the tip. SHMBO has been bugging me for years to do a cheapo cream ale, If steam beer yeast is really a confused ale yeast, it's probably good for it. I kind of got the impression that it was an ale yeast watching it in the carboy.

Actually I'm pretty sure reddskinnfan, though a fan of my favorite team, has it reversed. Steam beer yeast is a lager yeast that is used to brew at ale temperatures. Because in California's hot climate they couldn't get the cooler temperatures needed for lagers, thus they developed this yeast which has the fruity notes you find in ales but still has the crisp clean taste of a lager.
