This has got to be one of the cleanest and best attenuating yeasts I have ever used.. Just dry hopped my IPA its my 3rd beer with US-05 and all 3 have finished at 1.010 or lower.. MY amber was 1.010, my brown 1.008 and my IPA 1.007.... Awesome.... And the taste is so clean... My Amber was nice and malty with plenty of hops... My brown had a very nutty finish.... and my IPA has all the bitterness I wanted I can not wait for the Dry Hop to finish....
I think I have found My house ale....

Hey WABrewer. I have been using US05 for about 15 batches of APA and IPA and I love this one a lot. For a fraction of the price of the WYEAST 1056 you get the same good stuff. Now I just brewed a Rye IPA (Denny Conn) using WYeast 1450 Denny's Fav 50 and it is going very well, lots of activities in the airlock. Can't wait to try it. Would you post your house ale recipe?

@ Dennis.....My IPA was 1.059, My Amber was 1.050, and my brown was 1.052...

WABrewer finally you found it... I've used US-05 for my last 10 or so batches of beer. Yeaast cakes, yeast scoops, cleaning and storage. Great way to save money even though the dry is so cheap...
I find it hard to remember to grab yeast when I go to the brew shop. I scooped globs out of a yeast cake into 3 fermenters and dropped on the remaining cake. 1 packet for 5 beers

US-05 has been the house yeast here too for all of my ales (except heffeweisen). This stuff works every time without any worries and finishes nice and clean. I think I'm going to try a kholsh with it soon to see how well it does on a cooler fermentation temp (60*).

Can't remember the user, brain is shot after my 7 days visiting family in Washington, but remember he gets a .5 kg brick of 05 for the brewpub and uses it over 4-5 batches (house yeast) down to 58f...
Good stuff

+1 to WA - I really like this yeast as well! It finishes clean and can take higher fermentation temps without off flavors. Never used Pacman though...

Isnt Pacman what Rogue uses almost exclusively?

Yep. I think I used pacman once. Nothing special.
used 1450 once. Made a great RyePA but not sure if it was better than s05 or another yeast would have been.
If I need something along those lines, I'll stick with US05

Bryan, Availability of 1272 is why I don't grab 1450 or 2450. Very similar with the Wrye Smile recipe.

My two house strains I am ranching are WLP001 California Ale Yeast, and WL005 British Ale Yeast. I find they are suitable for most beers, with the WLP005 better for the malty beers, and WLP001 for Pales. I always keep a packet of US-05 in the fridge just in case I need it. Tonight I used US-05 for a Pear Cider, I've never made a cider before but I think US-05 should be clean enough to work.

LosTresBrew - I just finished a cider done with US-05 and it was good. The things I noted in it's use were...
It didn't clear nearly as fast or well as Sweet Mead Yeast.
Seemed to have an odd mouth feel which I cannot explain.
The esters weren't as strong as the sweet mead yeast seems to leave.
I'm back to sweet mead yeast but need to test a couple more strains for my own.. Good luck, cider is a good refreshing change to the beer...
