Subject: temp for a poverty pilsner

for a continential pilsner with notty yeast would you rather

a. ferment in basement that varies 55 -70 degrees
b. ferment in fridge that i believe can get up to 50 degrees.

fermenting beer in my house means too many esters.. i have learned from my mistakes.


i have a window unit that cools the entire house... (cools the room to 68 and the rest of the house at 75.. so i assume... very very old house.

a controled temperature fermentation "chamber" is in my future... just not yet.


anyway.. these are my options.. i'm fairly sure i'll use the fridge.. just want some feedback

I think 50 might be pushing it for the nottingham. Can you put it in a cold water bath in your basement?

I was thinking that was a bit low, too.
You could go an even 70 with nottingham without getting too much in the way of esters, but that temp fluctuation doesn't look good.
I would get it close to the window unit (which is what I actually do), and go with 68.

I agree that nottingham wouldn't do too well at 50 or so. I would ferment the beer as low as you can in your basement, then lager it in your fridge for a month or so if you have the equipment to do so. the nottingham wouldn't finish the way you would want it to at that temperature in the fridge.

You could use an ice bath to keep it around 60 for the first two days of fermentation and then start using less and less ice each day until you get up to the 70 range and let it finish there. That would keep the esters down and still let it finish, then lager it in the fridge for a month after that.

Can you get a temp controller for the fridge?

Beg borrow steal? (Don't steal as it's wrong but you know the saying.)

It really is your best answer long term. Or can you get another yeast such as US05?

thanks guys for the help.. i'm thinking about the ice bath thing since i dont have a temp controller for my fridge yet... I'm a little worried just because i have never done it before. And would use a different yeast but living in southern MO, my closest lhbs has munich (dry german wheat) yeast and that is it. It is more of a wine store
