So my wife went out and bought a new oven today... It took us nearly 30 minutes to get to 400 in the old one.
So one option she did get was a convection oven... Not being the cook I had to look it up. Will this option help my home toasting effort as I move forward with the toasting project planning?
I'd love to just buy cheap 2-row and make most everything from there...

Yes the convection oven is a plus for toasting grains. Helps to dry them out faster if your making crystal malts and just makes the process go faster over all. I have started doing this myself and I love the flavors.

Home toasting your grains is a Fantastic Idea...I love doing it I have not made my own crystal yet but the Munich, Vienna, brown, and chocolate that I have been making are in my opinion better than store bought the color is sometimes slightly off but the flavor is incredibly fresh and much more tasty...

I had a combo convection/microwave oven. I didn't use the convection part a lot, but when I did it worked well. Once you learn how to adjust recipes times, I think you'll like it.

When I bake I frequently use a convection oven. One thing that you may need to do is lower the temperate and ad mentioned by others, shorten the time. I usually lower the temp about 25 degrees, and the time varies by what I am making. I am wondering how this would translate to toasting grains.

you should probably buy a good thermometer, a digital one with a probe you can put in the oven, because OVENS LIE!

BC has a good point. Use a thermometer and take good notes for the first couple times you toast to different levels, after that you know what temp to set your oven at and how long to cook to get different styles of grains. Try not to let the surface temp of the grain go above 160F.

OK SWMBO has used the convection feature twice now. Both times she set the temp for the desired temp, pressed convection... the unit automatically deducted 25 degrees and shortened the timer settings. Very cool, brownies are great, the cake thing is for a bingo night or something... Tonight meatloaf but not convection.
So far this LG unit is very cool. Really jazzed about the grain toasting...
