Subject: Flavor doesnt seem to last...

I have recently finished a batch of Brown Ale and everything is fine with the beer BUT, The flavor doesnt seem to linger or stay around as much as i would like. I used extract and specialty grains for this batch. Everything in process went smooth. The only thing was that this fermented really fast. As in fermented in two days then was done. Any ideas what went wrong?

How long did you leave in primary before bottling/kegging?

Primary 7 days, secondary 7 days, bottle 3 weeks

Then I dont think I can add anything useful, other than most of us here dont rack out of prinary for at least 2 weeks, if not 3-6 weeks.
I have on;\ly done a few batches w/ extract/ and then went all grain.

I have found that exercising patience, although difficult, results in a cleaner, more flavorful beer.

Yeah I wouldn't necessarily think that anything went wrong based on the info you gave us. If you could provide the recipe, and especially the yeast that you used, it might give us enough info to comment or give advice. What was your original gravity and terminal gravity? And what flavor are you describing that doesn't last long?

7 lbs ultralight extract
8 oz. crystal 60l
8 oz. Honey malt
4 0z. chocolate
1 oz. northern brewer
2 oz. cascade
1 oz. cascade
whitelabs california wlp001 - california ale yeast
OG: 1.042
FG: 1.010

Im definitly getting malt and hops. Maybe a little sweet for me. It just doesnt seem to linger on the taste buds when im done. Most beers ive had seem to do this. its not really a big thing. The beer is tasty otherwise. Just curious. Also seemed a little watered down. I did basic 5 gallons batch. Everything was measured out.

Ok a couple of things; that recipe helps. The sweetness of this beer doesn't make too much sense, as your final gravity is pretty low and it should be somewhat dry. I'm not sure when you added your hops, but they should add enough bitterness to balance this beer. In my opinion, the beer could have used at least another half pound of crystal malt, which would help give the beer more body and not be watered down. If the beer doesn't linger on your tongue for long, this could actually be a good thing, and mean that your aftertaste is crisp and clean, and doesn't leave a sweet flavor on your tongue from extra sugars. The recipe looks pretty good, but I don't understand how you got such a low starting gravity from 7 lbs of extract. You know which kind you are using? 7 lbs of extract for me would give me 1.060 easily.

The extract was prepackaged by my brew shop. So im not sure exactly what company makes it...the hop times were 60 10 and 1 in order of recipe

Did you re-weigh out your malt before adding? I had to fight with my local brew shop about hosp and now buy online in bulk because i bought 12 oz and after weighing them for my IPA it turned out that all were short and i only got 9 oz talk about pissed.. make sure you see it weighed or check it too many people try to scam. I found out that the guys at my shop were shorting hops anywhere from .7-.23 just to be able to give them selves enough to brew their beers what a shame.. I went it back and bought 3 more, made them weigh their pre-packaged hops and showed the owner that they were short it was funny the employee was all uhuhuhuhuh i dont know what happened .. moral to the story never go with trust check everything..

It sounds to me like the beer is dryer than anticipated. Which is kind weird cause usually extract has a lot of unfermentable sugar in it. Next time you make this on sub in a lb of dark or amber extract to add a bit more unfermentable sugar, this should help with the mouth feel. Or you can try a different yeast that isn't going to chew through the fermentables as well.

a lingering taste doesn't seem as much a problem with malt/hops as with the water or yeast. Liek Thom mentions, try a different yeast that claims to be more malty. I'd be interested to see what your water chemistry is like. A touch of sodium and some Chloride might go a long way to achieve those results.
