85% Pils, 15% Sugar
Stryian to about 30 IBUS
Mash Low and use Duvel yeast.

I thought Duvel had some late addition hops. Maybe .25-.5 ounce at flameout in a 5 gallon batch.

Just had duvel a week ago or so, and man that sucker is dry. I would imagine you'd need a pretty good starter to get the gravity down so low. That simple sugar in there will help with that too. I'd be prepared with a blowoff tube, as that much simple sugar and a strong belgian yeast can really take off. I experienced that notion with my recently brewed trippel that had close to 20% simple sugars and blew up in my closet.

Duvel is so damn good. They go to great care to get it dry. Increasing ferm temp at finish I think. Then it's sort of lagered very cold to smooth it out. Keeping color light is also a tough task but I'd rank it of least importance. Flavor, smoothness and mouthfeel are its hallmark, I think.

I've done what Robert mentioned but more like 20% sugar. I don't know how close to duvel but its a pretty clean very dry strong beer. I still have some, if I can find a fresh duvel I'll compare. My last duvel tasted old and not well conditioned in the bottle so it wasn't much of a comparison.

When Liquid Solutions closed, I bought a 6 year series of Duval to do a vertical tasting. Know if I just knew someone else interested in sampling some Duvel...
