Subject: How to make BAD Beer.

Ignore it. Ignore sanitation. Ignore time periods. ignore the beer which is screaming to be bottled or keged. Just walk by the 5 gallon batch of beer every single day. It will be there tomorrow.
I made a batch of Copper ale in early November. And left it in primary. This isn't the first batch I have hedged on. I have been getting careless the last few batches and have not been terribly successful. Nothing undrinkable, but not good quality beer. In the past, I had made some really good beer without going crazy with sanitation. just a quick rinse with bleach water then rinse with clear water and things were turning out great.......until that Belgian that had a slightly smoky flavor.......but let me come back to the copper ale. Today I decided to move it to keg and wet hop it and force carb for a superbowl party. Hydrometer showed it had fully converted sugars to alchohol. Then I tasted it. IT was like ltrying to drink a 9 volt battery. Sour doesn't even begin to cover it. I will be pouring it all out onto the compost pile tomorrow morning. I'm afraid it will kill my septic tank if I pour it down the drain.

Saturday I am going to pull all my equipment and disinfect it completely. Not sure if I will try to brew this weekend or not. This is a lesson I could have lived without.

Sounds like your down a little WCD, I get like that once in a while, sounds like your either real busy or maybe having a little bad luck. I would just try on regrouping yourself and start all over. That's one reason why I do a lot of one gallon batches, got another one going now, taste testing is great, always something to learn, learn alot from these threads. And of course practice does make perfect. I remember my first brew.........crappy..!!!!!! but now, I just brewed a (I call it "Buster Brown Ale" that I think would be able to enter in a brew contest. I would get rid of the bleach. regroup, and brew a winner.
Kurt, like that gonna cry stuff........hahahaha..

WCD what you don't need is coddling and back pats and oh regroup etc... What you need is a good homebrew to breakyour streak... Additionally you need a good ass kicking for ignoring your honorable homebrew duties and tasks. Shame on you...

I rolled with this lax attitude a few times, and paid the price. Beer was ok, but definitely not great.

I started with this attitude.........until I made a batch that tasted like I was drinking a freshly opened bottle of canned corn..........BLUCK!! Heavy duty sanitation since.

I havelearned that sanitization is not something to skimp on. I don't think letting it sit a while is too detrimental, but killing all the little bugs is very important
