Subject: New Recipe...What do you think??

Hello all!!

Well I wanted to brew a Biere de Grade and of course my LHBS did not have any Vienna which was going to be like 85% of my grain bill. I was so frustrated that I just ended up putting the following together off the top of my head. Let me know you think....

8.0# American 2-row
4.0# Munich 10L
0.5# Crystal 40L
0.5# Crystal 80L
0.5# Wheat
0.5# German Smoked
.25# Victory
.12# Roasted

1.0 oz Northern Brewer 60 Min
1.0 oz Amerillo 20 Min
1.0 oz Amerillo 1.0 Min

Undecided on using wither Saf-04 ot Nothingham Dry yeast.

I put 2 oz of Rasted Barley to give it a nice red hugh but I realized afterwards that I had already put Crystals 40 and 80L so this beer will be more like an Amber Ale.

As for the Hops, this is my weakest area of expertese. I didn't want to use Warrior again as the last time I used that hop it came out really bitter. Just a bit too bitter for my tastes and that was in a Big Stout.

Any comments are greatly appreciated!!!

As a side note I just bottled a RIS today that I had aged in a brand new American Oak Barrel. I kept it in there for 2 weeks. A nice amount of Oak flavor and aroma. It's going to be a really nice beer. I rinsed out the cask and then put 5 gals of Barleywine I had in the primary since Christmas. I'll keep that in there for another 2 to 3 weeks before bottleing. Both these beers are going to be great around Christmas coming up if they make it.

Not sure about the smoked or Amarillo hops. The Amarillo will provide a citrus hop flavor which I don't think fits with a BDG. That said, it's homebrewing and it could be a really interesting beer.

I hear you Jeff. I knew I wasn't going to make the BDG I wanted to so I ended up making somewhat of a hoppy Amber Ale. Finished about an hour ago and I ended up using the Saf-04. I think that strain flocs out better than most yeasts. I never used the Notingham but I have a stout in the works where I think it will work well.
