Preparation | |
| Step mash Grains w/ration of 1 qt/pound grain @135 for 30 minutes. Raise temp. to 152 by adding 2.5 qts of 200 degree water and heat. hold at 152 for 20 minutes then raise temp. to 168 and rest for 5 minutes. Mash Out. Boil for 90 minutes .375 ozs. perle @ 90 .375 ozs. perle @ 30 .750 ozs. perle @ 2 | |

| A crystal clear (unless you mix the yeast) bright blond ale. It has a malty spicy nose. Excellent with lemon and a favorite among the female crowd. For those that enjoyed pyramid wheat when it first came out this is the match. Soft White Wheat is a must for the recipe. | |

| I like the look of this recipe, and have had plenty of pints of the original, so would like to try it. Where does one get the soft white winter wheat, to be sure that's what it is? | |

| I did a starch test at the end of the 55 minutes. The iodine turned jet black.<br>I waited another 35 to 40 minutes and did another test. This time it was fine.<br>Burp | |
