Ingredients
  • 11 pounds 2 row
  • 1.5 pounds Munich
  • 11 oz Crystal 30 lov
  • 4 oz Roasted Barley
  • 3/4 cup brown sugar
  • 2 oz Goldings @ 6% 90 min
  • 1/2 oz Fuggles (finish)
  • Edinburg whitelabs yeast
Preparation
Infusion mash at 158 F for around 90 min until converted. Sparge with 5 gallons @ 165 F. Ferment to completion and bottle with 3/4 cup corn sugar.

Comments
Very malty with a little residual sweetness and just the right hint of hops. This takes at least 6 months in the bottle to really mature.

A tip for scotch ale makers...take the first gallon of runnings and boil it down in a separate pot to about half its original volume or less. Add this back to your main boil kettle. Really enhances that malty, caramelly taste of a scotch ale!
