  • 2.5 lb. Maris Otter Pale Malt
  • 2.0 lb. Wheat DME (55wht/45barley)
  • 14 oz. Dehusked Chocolate Malt
  • 8 oz. Crystal 60L
  • 8 oz. Malto Dextrin powder
  • 4 oz. Carafa
  • 4 oz. Special Roast Malt
  • 6 oz. Victory Malt
  • 2.5 oz. Black Patent Malt
  • 2 oz. Roasted Barley
  • 0.75 oz N.Brewer pel. 7.7%AA for 60min
  • 0.5 oz Cascade pel. 5.7%AA for 60min
  • 1.0 oz Cascade pel. 5.7%AA for 20min
  • 0.25 oz N.Brewer pel. 7.7%AA for 20min
  • 0.5 oz Cascade pel. 5.7%AA for 5min
Preparation
Step mash grain: 122F/15 mins; 142F/20 mins; 152F/60 mins; mash out 167F/10 mins; Sparge 150F/45 mins (4 gals) Add liquid & dry extracts & Malto Dextrin to collected wort in kettle; top up, if needed, to 6.5 gal for boil. Preboil 10 min/skim top.Yeast: WLP001/California Ale

There's really no need to step mash this. A single 45-60 min. rest at 152F would be fine.
