Ingredients
  • 1.5 lbs Hopped Light Malt Extract per gallon.
  • Approx 8-10 Flavored Tea Bags per gallon.
  • Mutons 6 gram beer yeast.
Preparation
Boil malt extract in 1/3 gallon of water (more if making a larger batch) for 20 mins.

Boil tea bags in seperate pot with similar amount of water, 20 mins.

Combine wort and tea, cool by any means neccesary.

Bring level to a gallon (or to whatever scale) and pitch the cheapest beer yeast you can get your hands on. I used a 6 gram pack of Muttons.
Specifics
Style Winter Beer
Recipe Type Extract
Batch Size 1 gallon or more.
Original Gravity
Final Gravity
Boiling Time 20 Mins
Primary Fermentation plastic 7 days more if too bubbly
Secondary Fermentation glass until not fermentation halts.
Other Specifics For the "Flavored Tea" I would suggest a Caffiene Free Celestial Seasonings. If you drink like I do at times, that much caffiene is probably not a good thing, or at least so says my wife.
Comments
I had tried this first as a 1 gallon batch out of sheer fear. I used a Mandarin Orange tea and was surprised at the popularity of it when sampled among non-homebrewing friends. It was even wonderfull at room temperature.

Lacking wisdom I have started a second 3 gallon batch with a peppermint tea.

I hope to make a 5 gallon batch of the mandarin orange in the late summer or fall.

We have begun our homebrewing career specifically brewing herbal beers. However, instead of buying commercial teas we make our own by steeping herbs in a muslim bag or brew sock. We have made aphrodesiacs (using damiana and rosehips), immune boosters (ginger and echinacea), psychotropics (sage, rosemary, or yarrow). We turn the tea into whatever style of beer we are looking for -- wheat, amber, dark ale. Sometimes we combine grains and sometimes we don't. People love it and the results are unique and nourishing.

I just started brewing this fall. I haven't been your normal home brewer, my first batch was a half gallon of sumac yarrow mead and my first five gallon batch was a wild highbush cranberry light ale. I do want to try a black tea beer. I was wondering if the caffeine comes through the brewing process? In anycase, I look forward to giving this a shot.
