Preparation
Mash all grains in 5 qts 168º water treated with 2 tsp gypsum, stabilize @ 152º for 1 hour. Sparge with 9 1/2 qts 170º water. Top up kettle, dissolve DME, and bring to boil. Skim scum and start hop schedule after 10 minutes of boiling. 1 tsp Irish moss in boil for 20 minutes. Cool, pitch, and rack off trub 8 hours later.
